Have found the easiest thing to make for anytime eats and its good for you and fairly inexpensive..... SO SIMPLE... Ready
1 package of coleslaw mix (or shredded cabbage/carrots if you have the patience) I also added a package of broccoli slaw.
1lb of any lean meat.. I used chicken and sliced it in small strips like the cabbage
1 bunch of scallions
cucumber cut in thin strips
garlic powder
onion powder
spicy red chili thai sauce
whole wheat wraps, rice paper , bib lettuce to wrap it in or just a plate..
Cook the chicken in a skillet with a little oil (I use coconut) and garlic powder. after the chicken is cooked through remove to a plate
put coleslaw and broccoli slaw into same skillet and cook down.. while its cooking slice bunch of scallions into it add a little more garlic powder I also added a few shakes of ginger. Cook 8-10 min til it cooks down a bit but is still crunchy. Add chicken back to it and re-warm... serve in chosen wrap with a good fair shake of Thai Chili sauce and thin strips of cucumbers.. The spice of the chili and cool of the cucumber is SO perfect.
I ate mine today just on a plate to avoid the carbs..last time added mushrooms to it and could probably add almost any veggie to it you wanted just to change things up and add more nutrition.
